Lazy Cabbage Meat Patties

(Голубцы ленивые, Golubtsy lenivye)

Serves 4

1/2 cup rice

1.5 teaspoons salt

1/2 lb cabbage

1 lb ground meat (beef and pork mixture)

1 egg

1 medium carrot

1 onion

2-3 garlic cloves

2 tablespoons tomato paste

1 tablespoon flour

4 tablespoons vegetable oil (sunflower)

Rinse the rice and drain the water.



Transfer the rice to a medium pot and cover with a full cup of water.

Add half a teaspoon of the salt.

Put over medium fire on the stove, bring to a boil and cook for 10 more minutes.
Almost all the water will boil out. Set aside to cool.

Dice the cabbage into thin and short julienne strips.

Add half a teaspoon of the salt to the bowl with the cabbage and squeeze well with your hands mixing the cabbage with the salt so that the cabbage starts releasing juice.

Add the ground meat, egg and cooled-off rice to the cabbage.

Mix all ingredients well and pound the mixture so that it’s very uniform.

Moisten your hands and divide the mixture into 8 equal parts.

Shape into oval patties.

Transfer to a deep baking sheet.

Place the baking sheet into a preheated oven (400F) for 15 minutes.

Prepare the sauce.

Peel the onion, carrot and garlic.

Cut the carrot into julienne strips, the onion into semicircles and the garlic into circles.

Transfer the vegetables into a saut pan and add the oil.

Cook the vegetables over the medium heat for 10-15 minutes stirring periodically.

Add the flour and tomato paste.

Stir the flour and tomato paste with the vegetables as the sauce continues to cook.

Mix everything together quickly – preferably for no longer than one minute to prevent the vegetables and the flour from burning.

Pour in two cups of cold water.

Sprinkle the sauce with half a teaspoon of the salt.

Stir the sauce well and bring to a boil.

Pour the sauce over the cabbage patties in the baking sheet so that they’re evenly covered.

Return the baking sheet with the cabbage patties to the oven for another 10-15 minutes.

It’s important for the sauce to boil in the oven – but make sure not to overcook.

Serve two cabbage patties per plate generously covered with the sauce.
