Milk Kissel

(Molochnyi kisel’ s malinoy)

Serves 2

1 pint milk

2 tablespoons sugar

Handful fresh or frozen raspberries

1 or 2 tablespoons cornstarch

Half a cup cold water


Kissel is a traditional Russian thick dessert drink. This particular kind can be prepared in two different ways depending on the desired end result: if you want to end up with a thick beverage, you’ll need to use one tablespoon of the starch. Two tablespoons of the starch will yield a delicious jelly-like dessert.

Place the sugar and the berries into a medium pot; crush and mix into a paste with a spoon.

Pour in the milk and place on the stove.

Put the starch into a cup and add half a cup of the cold water, stir to combine making sure there are no lumps.

As soon as the milk boils, take the pot off the stove.

Pour in the starch mixture and stir well.

Your kissel is ready!
